courgette
cream of courgette and potato soup

This makes enough for two.
Ingredients
2 large courgette
2 medium sized potatoes
1 medium sized onion, finely chopped
creme fraiche
chopped parsley
Method
Peel and chop the potatoes. Cube the courgettes and add them to the potatoes. Add the chopped onions and enough water to easily cover them.
Add a good handful of chopped parsley.
Add vegetable stock and appropriate amounts of salt and pepper.
Bring to the boil and simmer for 15 minutes or so.
Blend using a hand blender. Take some of the liquid and combine with a couple of teaspoons of cornflower. Add the thickened liquid back into the blended soup.
Heat on a low heat for another 5 minutes.
Add creme fraiche and serve with chunks of crusty bread.

This is from Jamie's "Jamie at Home" book, on page 317. I've tried several things and they all work well. These include beetroot, courgette and red pepper.
brie and tomato tart

I made his from Gill's new vegetarian book. Basically, you take some puff pastry and lay it out on a baking tray. You then put overlapping rows of brie, courgette and tomato onto it. The courgettes were fried with oregano for a couple of minutes. It takes about 20 minutes in the oven and tastes great. I imagine that mushrooms would go well, even asparagus. Worth experimenting with.
